Betty's Salad

You finally get a peek into my more sensitive side - a SALAD!  But wait - with an ample topping of Eggs and Bacon, this almost qualifies as Man Food.  This truly is one of the tastiest salads (I still struggle with that word) you can put together.  Originated by a local Monroe native, Betty Timko, many years ago, you really need to give this a try some evening when you are in the mood for something a little lighter.  Don't be rude and scrape all the good stuff off the top of the bowl!

Ingredients: 

 

The Salad

The Dressing

1 head of lettuce

1/2 cup brown sugar

1/2 pound fresh spinnach

1 cup vegetable oil

1 small can of bean sprouts - drained and chilled

1/3 cup ketchup

6 hard boiled eggs chopped coarse

1/4 cup vinegar (Red Wine works nicely)

1/2 pound bacon chopped coarse

2 Tablespoons chopped shallot

 

1 Tablespoon Worcestershire sauce

 

Preparation:

1. Prepare dressing by combining all ingredients and whisk vigorously for a few minutes.

2. Tear lettuce and spinach into a large salad bowl.

3. Layer bean sprouts, chopped eggs and bacon onto top of salad.

4. Grab a portion - dig deep into the green stuff too - drizzle with dressing - you're done!
